What is appam?

Appam is a south Indian dish, which resembles pancakes in appearance and consistency. They are traditionally made from rice flour or semolina batter along with coconut milk, sugar, salt, and fermented black gram dal (also known as urad dal). The mixture is left to ferment overnight before being cooked on an app Kallan – a wide frying pan that has ridges for even distribution of the mix.
